Family Size Carrot Cake
This is a large and simple cake to make .Grease and line a large square baking tin. Pre heat oven to 190-200 degrees
1 1/2 cups vegetable oil
2 cups of caster sugar (or equivalent of coconut sugar)
Beat these for 5 minutes until fluffy
2 cups plain flour
1/2 teaspoon salt
1 teaspoon bi-carb soda
2 teaspoons cinnamon
Sift and add to the egg mixture. Beat to mix
3 cups grated carrots
1 cup walnuts
Add to the above. Stir to mix.
Pour into prepared tin and bake for approximately 40minutes. It’s cooked after a skewer comes out clean.
8 oz cream cheese
5 tablespoons Icing sugar
Beat until fluffy. Ice the cake when cooled. Sprinkle with cinnamon.
