Thai Fish Cakes
Here are some tasty and surprisingly easy fish cakes to impress your family and friends. Makes 12-14
450g firm white fish fillets
3 tablespoons cornflour or rice flour
1 tablespoon fish sauce
1 egg, beaten
1/2 cup fresh coriander leaves
3 teaspoons red curry paste
1-2 teaspoons finely chopped ted chilli
100g green beans, very thinly sliced
2 spring onions (shallots), finely chopped
1/2 cup oil
Dipping sauce like sweet chilli
Place the fish in a food processor and process for 20 seconds, or until smooth. Add the cornflour, fish sauce, beaten egg, coriander, curry paste and chilli. Process for 10 seconds or until well combined.
Transfer the fish mixture into a large bowl.
Add the beans and spring onions and mix well. Using wet hands, form around two rounded tablespoons of the mixture into fairly flat patties.
Heat the oil in a heavy based frying pan over a medium heat. Without overcrowding the pan, cook until they are dark golden brown on both sides. Drain well on paper towels and serve immediately with a dipping sauce.
