Apple Pie

Pastry ingredients
1 cup plain flour
1/2 cup SR flour
1/4 cup cornflour
1/4 cup custard powder
1 tablespoon castor sugar
100g butter
1 egg separated
1/3 cup water, approximately
1 tablespoon sugar, extra

Apple Filling Ingredients
10 granny smith apples
2 teaspoons lemon juice
2 cups water
1/2 cup brown sugar
1/2 cup sugar
1/3 cup cornflour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Pastry Method
Sift flours, cornflour and custard powder together. Place in food processor with cold butter. Blend until mix looks like breadcrumbs.

Add egg yolk and water. Whizz and dough will come together.

Cover the dough in cling wrap and refrigerate for 20 mins.

Divide dough in half. Roll out on lightly floured bench to size of pie dish. Place in lightly greased dish. Add cool cooked apples. Cover with remaining pastry. Trim edges and press edges with a folk.

Brush top with lightly beaten egg white and sprinkle with extra sugar.Bake in hot oven for 20mins. Reduce heat to moderate and bake a further 20 mins or until golden brown.

Apple Filling Method

Drizzle lemon juice over apples set aside.

In a large pan add water, sugars, cornflour, cinnamon and nutmeg.

Bring to boil and stir until mixture thickens. Add apples. Cook 10 minutes to soften. Cool. Drain off excess liquid before adding to pie shell.
