Living Simply With Lois


I really had a craving for balsamic mushrooms , so I went to the local farmers market to grab some button mushrooms.

They turned out magic  

1 tablespoon olive oil
1/2 kilo button mushrooms
1/2 teaspoon salt 
1/4 teaspoon freshly ground black pepper
1 1/2 teaspoons finely chopped  thyme leaves or dried 
2 tablespoons balsamic vinegar
1/2 tablespoon  brown sugar
3 cloves garlic, finely minced or grated
Chilli flakes 
2 tablespoons pomegranate seeds 

Clean the mushrooms with a soft tea towel trim stalks. Then toss them in a deep pan with a good splash of olive oil. Cook stirring so they don’t burn. 

Reduce the heat to medium-low, add the vinegar, sugar, and garlic. Cook for around 6-8 minutes stirring occasionally, until the mushrooms are soft and tender.

Drain the mushrooms and reserve the liquid from the pan for the dressing.

Mix in chopped avocado, baby rocket leaves. 

Drizzle on the dressing (the reserved liquid ) add the fresh or dried Thyme and chilli flakes. Then sprinkle with pomegranate jewels.
