Lachlan Charters’ journey as a Chef has taken him from dusty outback pubs, the dirt of mining towns, powder-snow tracks in the Victorian Alps, and the vineyards of W.A., to the glitz and glamour of the Ritz in Sydney.
To find him these days, you need travel no further than Lennox Freewave, where he is content to be a Chef with a day job.
At a young age his family moved from Gunnedah to Sydney where Lachy spent his primary school years. By the time of his teenage years the family returned to the rural life of Grafton, which is where they still are based.
After leaving high school in Grafton his career had a false start. Initially, Lachy went to university to study Computer Engineering but he just couldn’t stomach it. He admits having always loved food; he just loves to eat, so it made more sense to delete the computer bytes and reboot in the cooking trade.
To gain the best experience in the trade, Lachy headed back to Sydney in 1999 to start his apprenticeship based at East Sydney TAFE. This meant most of his experience was gained around the Eastern Suburbs, initially in in pubs like the old Paddington Inn and gradually working his way up to more renowned restaurants like Otto’s at Woolloomooloo and other prestige ‘Hatted’ venues like Double Bay’s The Ritz.
In 2005 he went to visit his sister in Perth and intended to head north to Broom to find work. Instead a three day surf trip south to Dunsborough, near Margaret River, turned into three years living, working and surfing the region.
By 2008 his father’s illness brought him back home to the east coast and closer to Grafton. With more cheffing opportunities in our region Lachy came to stay originally with his aunty living in Lennox.
The past eight years moving around Lennox has seen him work in some different local cafes and restaurants. In this time he also worked a couple of snow seasons at Falls Creek. But the wildest rides of his life came between the snow seasons registered as a temp with an outback agency doing many quick short-stint jobs that took him to some ‘interesting and real challenging parts’ of Australia.
The dust has truly settled for Lachy now since buying a house and working at Freewave for eighteen months, where after the birth of owners Pete and Mayumi’s first child he stepped permanently into the role of Chef and Manager.
