Lemon Crinkle biscuits????????– makes 14 – 18

Close your eyes if you like the tang of lemon as you will love these cookies

2 cups (240g) Almond meal

1 cup (220g) castor sugar ( or coconut sugar )

1/4 teaspoon bicarbonate soda

1 tablespoon finely grated lemon rind

1 tablespoon lemon juice

2 egg whites

1 cup (160g) icing sugar ( for rolling the biscuits in)

Preheat oven to 160 degrees

Place the almond meal, castor sugar, bi carb soda lemon rind and lemon juice in a large bowl

Place egg whites in a separate bowl and whisk till soft peaks form

Gently fold the egg whites into the almond mixture until smooth

Roll tablespoons of mixture into balls and roll in icing sugar

Place on trays spin baking paper

Allow 5 cm between each to allow for spreading

Cook for 14 -16 minutes or until lightly brown and cooked through. Allow to cool before transferring onto wire racks.
